Granny Smith apples, peeled, cored, and half-inch diced (any tart, firm apple will do)
1 cup
chopped yellow onion
2 tablespoon
minced fresh ginger
1 cup
freshly squeezed orange juice (
2
oranges)
3⁄4 cup
cider vinegar
1 cup
light brown sugar, lightly packed
1 teaspoon
whole, dried mustard seeds
1⁄4 teaspoon
hot red pepper flakes
1
1⁄2 teaspoons kosher salt

Instructions
Combine all ingredients in a large saucepan and bring mixture to a boil over medium-high heat, stirring occasionally.
Reduce heat to simmer and continue cooking, stirring occasionally, for 50 minutes to 1 hour, until most of the liquid has evaporated.
Remove from heat.
It can be used immediately or it can be stored, covered, in the fridge for up to 2 weeks.
