Wash and peel the carrots. Cut into rounds, sticks, or leave whole – depending on how you want the dish to look. (If leaving whole, you might want to cut the bigger ones in half lengthwise)
In a large saucepan, combine the carrots, water, oil, garlic, and honey. Bring to a boil, and then turn the heat down and simmer, covered, until carrots are just tender (about 10-25 minutes, depending on the size of the carrots.)
Remove the lid and return to a boil, until the water cooks off.
Serve hot or warm, garnished with the thyme. If desired, spoon any remaining glaze from the pot onto the carrots.
