Roasted Purple Potatoes

Ingredients

  • 28 ounces purple potatoes
  • 12 tablespoons olive oil
  • 1/4 cup fresh basil, snipped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400. Wash the potatoes (no need to peel). Place in a glass baking pan and drizzle with olive oil, sprinkle them with garlic, basil and salt and pepper, and then toss to coat.
  2. Roast 20 minutes. Turn the oven off, stir them, and keep them in the oven 10 minutes more.
