Spicy Pumpkin Pancakes

Ingredients

  • 2 1/3 cups pancake mix
  • 1 1/4 cups milk
  • 3 egg whites
  • 1/3 cup canned pumpkin puree
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Heat a skillet over medium-high heat, or heat electric griddle to 375. Add vegetable oil.
  2. Stir all ingredients until blended. Ladle the batter (about 1/4 cup per pancake) onto hot griddle.
  3. Cook until edges are dry. Turn and cook until golden.
