Hot Milk Cake with Berry Sauce

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1 egg yolk
  • 2 1/2 cups sugar
  • 1 tablespoon vanilla
  • 1 1/4 cup milk
  • 1/4 cup butter


  1. Heat oven to 350 F. Generously butter two 9-inch cake pans. Set aside.
  2. In a large bowl sift together flour, baking powder, and salt. Set aside.
  3. In a Kitchen Aid stand mixer, beat eggs, egg yolk and sugar for about 4-5 minutes until mixture is thick and batter falls from whisk in a thick ribbon. Beat in vanilla.
  4. Meanwhile, heat milk and butter until little bubble appear. Remove from heat and set aside to cool.
  5. Pour the flour mixture into the egg mixture. Gently mix until the flour is incorporated (do not over mix). Add in milk mixture and fold just until combined. Pour batter into prepared pans.
  6. Bake for 50-60 minutes or until inserted cake tester comes out clean. Remove from oven and transfer to a wire rack to cool 20-25 minutes. Turn over to remove cake from pan. Sprinkle with confectioner’s sugar and serve with berry sauce.
