This is the perfect pancake mix recipe. If giving to friends, use a shelf-stable oil like coconut oil or shortening. If making for your own use, I recommend using butter and storing it in the fridge.

2 cups flour
½ cup powdered milk
¼ cup powdered sugar
4 teaspoons baking powder
1 teaspoon baking soda
1/4 cup butter (cold), shortening or coconut oil (see notes)
When you want to make the pancakes, add:
3 cups pancake mix
2 eggs, beaten1 1/2 cups water
Butter or oil for frying
Instructions
Pulse the dry ingredients plus cold butter, coconut oil or shortening in the food processor. Store in an air-tight container until ready to use (in the fridge if using butter).When ready to use, add the water and beaten egg and mix until combined.Heat butter or oil in a pan. Drop about 1/4 to 1/2 cup of pancake mix per pancake. If desired, add fruit. Once the batter becomes bubbly, flip it over and cook until golden-brown on both sides.Serve with PA Maple Syrup.
