Soft & Chewy Gingersnap Cookie Recipe

A delicious soft & chewy gingersnap cookie recipe.

Ingredients

  • 1 cup sugar
  • 1/2 cup (1 stick) butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup molasses
  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1 cup old fashioned oats

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cream the butter and sugar together in a large bowl with an electric mixer. Add the vanilla, egg and molasses and mix until combined.
  3. In a separate bowl, mix together the flour, baking soda, spices and oats.
  4. Add all ingredients together and mix until combined.
  5. Roll into golf-ball size balls and place on a baking sheet. Bake on the upper rack of the oven to prevent burning on the underside.
  6. Bake in a preheated oven for 9-12 minutes.
