Stuffed Peppers

Ingredients

  • 6 Large Green Bell Peppers
  • 1 lb. Ground Beef
  • ½ Onion, Chopped
  • 1 tsp. Salt
  • 1 Tbsp. olive oil
  • 1 C. Cooked Rice
  • 2 C. of Tomato Sauce
  • ½ tsp. Garlic Powder
  • 1 C. Shredded Mozzarella

Instructions

  1. Preheat oven to 350º F
  2. Bring a large pot of water to a boil
  3. Cut a thin slice from the stem end of each pepper
  4. Dice the top slices of green peppers, set aside
  5. Remove the seeds and membranes from the whole peppers
  6. Cook the whole peppers in boiling water 5 minutes, drain
  7. In a large skillet, sauté the onion, diced green pepper, and half of the salt (1/2 tsp) in the olive oil until soft
  8. Add the beef to the onions & peppers and cook until browned
  9. Stir in the remainder of the salt, garlic powder, rice, and tomato sauce and heat through
  10. Stuff each pepper with rice & beef mixture
  11. Stand upright in an ungreased casserole dish
  12. Cover with foil and bake for 45 minutes
  13. Uncover, sprinkle with cheese, and cook 10 minutes longer
  14. If desired, broil for 1-2 minutes on HIGH to brown the cheese
