Large Green Bell Peppers

lb. Ground Beef

Onion, Chopped
1 tsp
. Salt
1 Tbsp
. olive oil

C. Cooked Rice
2
C. of Tomato Sauce
½ tsp
. Garlic Powder

C. Shredded Mozzarella

Instructions
Preheat oven to 350º F
Bring a large pot of water to a boil
Cut a thin slice from the stem end of each pepper
Dice the top slices of green peppers, set aside
Remove the seeds and membranes from the whole peppers
Cook the whole peppers in boiling water 5 minutes, drain
In a large skillet, sauté the onion, diced green pepper, and half of the salt (1/2 tsp) in the olive oil until soft
Add the beef to the onions & peppers and cook until browned
Stir in the remainder of the salt, garlic powder, rice, and tomato sauce and heat through
Stuff each pepper with rice & beef mixture
Stand upright in an ungreased casserole dish
Cover with foil and bake for 45 minutes
Uncover, sprinkle with cheese, and cook 10 minutes longer
If desired, broil for 1-2 minutes on HIGH to brown the cheese
