This is a classic for a reason…stuffed peppers are delicious!

Ingredients

- 6 Large Green Bell Peppers
- 1 lb. Ground Beef
- ½ Onion, Chopped
- 1 tsp. Salt
- 1 Tbsp. olive oil
- 1 C. Cooked Rice
- 2 C. of Tomato Sauce
- ½ tsp. Garlic Powder
- 1 C. Shredded Mozzarella
Instructions
- Preheat oven to 350º F
- Bring a large pot of water to a boil
- Cut a thin slice from the stem end of each pepper
- Dice the top slices of green peppers, set aside
- Remove the seeds and membranes from the whole peppers
- Cook the whole peppers in boiling water 5 minutes, drain
- In a large skillet, sauté the onion, diced green pepper, and half of the salt (1/2 tsp) in the olive oil until soft
- Add the beef to the onions & peppers and cook until browned
- Stir in the remainder of the salt, garlic powder, rice, and tomato sauce and heat through
- Stuff each pepper with rice & beef mixture
- Stand upright in an ungreased casserole dish
- Cover with foil and bake for 45 minutes
- Uncover, sprinkle with cheese, and cook 10 minutes longer
- If desired, broil for 1-2 minutes on HIGH to brown the cheese
