2 cups fresh lima beans (about 2 lbs. in the shell)
1 medium to large sweet onion, chopped
2 T. butter
Salt & pepper
Optional Ingredients:
2 medium zucchini diced
1 red bell pepper diced
2 large tomatoes diced
extra butter
Instructions
Melt butter in a pan over medium/high heat. Add chopped onions and sauté until soft/translucent.Add corn, lima beans, salt & pepper (to taste) and sauté another 10 minutes. If you wish, you can add other veggies. Zucchini, red bell pepper & tomato are good choices. If you do so, start with a little more butter and add veggies at the same time as the corn & lima beans. Enjoy!
