Let’s go back a generation or two (or three), and all sit around a bucket and shell some lima beans. Make this recipe with 100% local veggies!
Recipe type: Side Dish
- 4 ears of corn- kernel cut off the cob
- 2 cups fresh lima beans (about 2 lbs. in the shell)
- 1 medium to large sweet onion, chopped
- 2 T. butter
- Salt & pepper
- 2 medium zucchini diced
- 1 red bell pepper diced
- 2 large tomatoes diced
- extra butter
- Melt butter in a pan over medium/high heat. Add chopped onions and sauté until soft/translucent.Add corn, lima beans, salt & pepper (to taste) and sauté another 10 minutes. If you wish, you can add other veggies. Zucchini, red bell pepper & tomato are good choices. If you do so, start with a little more butter and add veggies at the same time as the corn & lima beans.
