Let’s go back a generation or two (or three), and all sit around a bucket and shell some lima beans.  Make this recipe with 100% local veggies!

Super-Easy Succotash
Recipe type: Side Dish
  • 4 ears of corn- kernel cut off the cob
  • 2 cups fresh lima beans (about 2 lbs. in the shell)
  • 1 medium to large sweet onion, chopped
  • 2 T. butter
  • Salt & pepper
Optional Ingredients:
  • 2 medium zucchini diced
  • 1 red bell pepper diced
  • 2 large tomatoes diced
  • extra butter
  1. Melt butter in a pan over medium/high heat. Add chopped onions and sauté until soft/translucent.Add corn, lima beans, salt & pepper (to taste) and sauté another 10 minutes. If you wish, you can add other veggies. Zucchini, red bell pepper & tomato are good choices. If you do so, start with a little more butter and add veggies at the same time as the corn & lima beans. Enjoy!
