Somewhere along the line, my family decided that dinner was optional on a Sunday night. It may have been because we’d often eat a late lunch or visit relatives, but whatever the reason, cereal was usually what was offered for Sunday night dinner. I do like cereal, but when it comes to a meal I prefer something a little more substantial. So, we started a tradition of Breakfast for Dinner on Sunday nights.

Sometimes we have pancakes or French Toast, but my favorite is Belgian Waffles. The taste of waffles reminds me of Christmas morning, when my mom used to make them. I carried over this Sunday Night Breakfast for Dinner tradition into my married life, and now my three-year-old looks forward to it every week.

My sister-in-law shared a great tip for light & fluffy waffles: separate the eggs and whites and beat the egg whites first. Then fold in to the remaining wet ingredients prior to mixing with the dry ingredients. Using butter will create a richer waffle. Using oil will create a crispier waffle. Personally I love the flavor of butter so I prefer to use that.

Waffle with Fruit Compote

Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • 1 ¾ cups milk
  • ½ cup cooking oil or butter, melted
  • 1 teaspoon vanilla

Instructions

  1. In a medium mixing bowl stir together flour, sugar, baking powder, and salt. Make a well in center of mixture; set aside.
  2. Separate egg yolks and whites. In a medium bowl, beat egg whites until they are stiff. Add egg yolks and stir in milk, oil, and vanilla. Add egg mixture all at once to flour mixture. Stir just until moistened – do not over-mix.
  3. Pour batter onto grids of a preheated, lightly greased waffle iron (use a regular or Belgian waffle maker). Close lid quickly; do not open until done. Bake according to manufacturer’s directions. Remove waffle from waffle iron with a fork. Repeat with remaining batter. Serve warm & fresh off the waffle iron.
