It’s strawberry season, so that means my go-to dessert is strawberry shortcake. My 4-year-old LOVES to help bake. He also loves to eat whatever we bake, so the faster it’s done, the better. Enter: microwavable mug cakes. I’ll admit, I was skeptical that these recipes circulating on Pinterest would be any good. But they really are delicious and are SO easy!

All you have to do is melt the butter in a microwave-safe mug. Then mix the remaining ingredients in the mug and microwave the mixture for about a minute and a half. And viola! Shortcake is ready to be topped with copious amounts whipped cream and of fresh, delicious strawberries that are coming to Wolff’s from local farms now.

My 18-month old also heartily approved of this dessert. He was way more interested in the fresh strawberries than the cake, which is a good thing! In fact, he rummaged through the plate until all the strawberries were gone! My 4-year-old was definitely loving the cake part too though. This is a perfect dessert for a hot day when you want a fresh dessert but don’t feel like firing up the oven. It works great for kids or as an easy single serving dessert, or dessert for two. These are definitely the kind of recipes we’ll all want to keep handy this summer.

Microwavable Strawberry Shortcake

  • Prep Time: 5 mins
  • Cook Time: 2 mins
  • Total Time: 7 mins
  • Yield: 1 serving 1x

Ingredients

Scale
  • 1 1/2 tbsp butter
  • 2 tbsp sugar
  • 5 tbsp all-purpose flour
  • 1/4 cup milk
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • For topping:
  • Sliced strawberries
  • Whipped cream

Instructions

  1. In a microwave-safe mug, melt butter in microwave for 15-30 seconds.
  2. Once butter is melted, swirl around in mug to coat the sides. Add all remaining ingredients. Stir to combine. Microwave 1 minute 15 seconds. If the top is still soft, microwave again in 15-second increments. Mine was done in about a minute and 45 seconds. It should be springy and easily come out of the mug when you run a dull knife around the edges. Remove from mug and slice in half. Serve with sliced strawberries and whipped cream.
