Yams and sweet potatoes bring extraordinary flavor to the table.  This recipe highlights that natural flavor by adding just two simple ingredients.

Simple Holiday Yams

Ingredients

  • 3 lbs. fresh, whole yams (or sweet potatoes) – try to get consistent sizes
  • ½ cup brown sugar
  • 4 tbsp. butter

Instructions

  1. Pre-heat oven to 400°. Wrap yams tightly in tin foil. Place yams in oven, directly on rack*. Cook for 50 min – 1 ½ hours (until soft- test with fork). Remove, let cool for about 15 min. Unwrap, peel off skins, combine yams in bowl with butter and some sugar. Mash, as you would potatoes. Add more sugar to taste, if desired. Serve warm.
  2. *Cover bottom rack with tin-foil to catch bubbly yam juice. Yams should be placed on top rack, which should be situated in middle of oven. – This is not necessary if oven space is tight, but it makes clean-up easier.
