Asparagus & Strawberry Salad with Orange-Avocado Dressing

- 1 cup fresh-squeezed orange juice
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1 bag of spring mix (1/3 pound)
- 3/4 cup fresh strawberries, sliced
- 1 pound asparagus
Instructions
- Dressing: Puree avocado, scallions, orange juice, salt &
- pepper in a food processor until smooth.
- Trim asparagus, slice into ribbons using a vegetable peeler
- (leave raw)
- Toss salad greens, strawberries and asparagus together
- Plate salad & drizzle with desired amount of dressing
