Holiday cookie season is upon us, so it’s always nice to have some new cookie recipes in one’s repertoire. 

For me and my family, cookie is usually synonymous with oatmeal chocolate chip cranberry cookies. But I tend to branch out a little bit during the holidays. A few years ago I tried a recipe for soft and chewy gingersnap cookies. They were a hit!

This year I decided to try the recipe again, but this time I added the oats back in. I chose oats because they add a great texture to the cookie and are very healthy! 

As a gluten-free whole grain, oats are loaded with fiber, vitamins and nutrients. According to Healthline.com, they are an excellent source of manganese, magnesium zinc and folate. A half cup of oats even contains 13 grams of protein and is only 330 calories!

This recipe calls for molasses to make that signature flavor and crisp-chewy texture. Be careful to watch them, though, so that they don’t burn!

I made them earlier this week and they were quickly devoured. I plan to make them again this weekend for an open house our church is having during the town’s Christmas tree lighting event. They are the perfect holiday cookie recipe for a Christmas party or cookie exchange.

Soft & Chewy Gingersnap Cookie Recipe

A delicious soft & chewy gingersnap cookie recipe.

Ingredients

Scale
  • 1 cup sugar
  • 1/2 cup (1 stick) butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup molasses
  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1 cup old fashioned oats

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cream the butter and sugar together in a large bowl with an electric mixer. Add the vanilla, egg and molasses and mix until combined.
  3. In a separate bowl, mix together the flour, baking soda, spices and oats.
  4. Add all ingredients together and mix until combined.
  5. Roll into golf-ball size balls and place on a baking sheet. Bake on the upper rack of the oven to prevent burning on the underside.
  6. Bake in a preheated oven for 9-12 minutes.
