This is a tangy, flavorful slaw that is unique and refreshing. When I made this I did NOT measure anything!  Slaw is very forgiving, and ingredients can be substituted easily. (The amounts in the dressing are my best guesses.  But, rest assured, if you use this guideline and taste as you go, you can’t go wrong!) -Ashley

Ingredients

  • 1 (small/medium) head of cabbage chopped
  • 1 large red bell pepper diced finely
  • 1 pink lady apple (cut into matchsticks, then cut in half again) – if not pink lady choose something very crisp and flavorful (granny smith or fuji would work)
  • 1 bunch of scallion, chopped
  • Good handful of cilantro, chopped (about a ¼ – ½ cup)
  • 1 jalapeno, finely minced
  • Chopped peanuts (top with these when serving, do NOT mix in ahead of time!)

Dressing:

  • Juice of 2 fresh limes
  • 1 tbsp. red wine vinegar
  • 2 tbsp. soy sauce
  • 1 tbsp. honey
  • 1 tbsp. sesame oil
  • ½-tsp salt (to taste)

Instructions

  1. Wisk the dressing until well-combined and pour over the veggies. Do not add the chopped peanuts until serving. Consider letting people add it to their portion if desired.
