Cauliflower-Bean Salad

  • 1 lb. Green Beans
  • 3 C. Chopped Raw Cauliflower Florets
  • 1 Can (15 oz.) Dark Red Kidney Beans
  • 4 Scallions, Chopped
  • ¼ C. Snipped Parsley
  • 1 C. Italian Dressing
  • ½ tsp. Dry Mustard
  • 1 Tbsp. Sugar
  • 2 Cloves Garlic, Minced


  1. Trim green beans and cut into 1 inch pieces, boil or steam for 12 minutes
  2. Combine green beans, cauliflower, kidney beans, scallions and parsley in a large bowl
  3. In another, smaller bowl, mix dressing, mustard, sugar and garlic
  4. Pour dressing over salad and toss
  5. Cover and refrigerate at least 3 hours, stirring occasionally
