Green Bean and Chick Pea Salad

- 1 pound Green Beans, Trimmed and Cut in Thirds
- 2 cup Cherry Tomatoes, Halved
- ½ cup Packed Chopped Fresh Basil
- 2 tablespoons Minced Red Onion
- 1 15 ½ ounce Can Chick Peas (Garbanzo Beans), Drained and Rinsed
- 3 tablespoons Olive Oil
- 2 ½ tablespoons Thawed Orange Juice Concentrate
- 1 tablespoon White Wine Vinegar
- ¼ teaspoon Salt
- ½ teaspoon Fresh Black Pepper
Instructions
- Steam the green beans, covered for 4 minutes or until crisp-tender
- Drain
- In a bowl, combine green beans, tomatoes, basil, onion and chickpeas
- Combine the oil, o.j. concentrate, vinegar, salt and pepper
- Add sauce to the bean mixture and toss well
- Let stand 15 minutes at room temperature
- Toss before serving
