Green Bean and Chick Pea Salad

Ingredients

  • 1 pound Green Beans, Trimmed and Cut in Thirds
  • 2 cup Cherry Tomatoes, Halved
  • ½ cup Packed Chopped Fresh Basil
  • 2 tablespoons Minced Red Onion
  • 1 15 ½ ounce Can Chick Peas (Garbanzo Beans), Drained and Rinsed
  • 3 tablespoons Olive Oil
  • 2 ½ tablespoons Thawed Orange Juice Concentrate
  • 1 tablespoon White Wine Vinegar
  • ¼ teaspoon Salt
  • ½ teaspoon Fresh Black Pepper

Instructions

  1. Steam the green beans, covered for 4 minutes or until crisp-tender
  2. Drain
  3. In a bowl, combine green beans, tomatoes, basil, onion and chickpeas
  4. Combine the oil, o.j. concentrate, vinegar, salt and pepper
  5. Add sauce to the bean mixture and toss well
  6. Let stand 15 minutes at room temperature
  7. Toss before serving
