Swiss Chard & Creamy Pasta
 
Ingredients
  • 1 Lb. Swiss Chard
  • 1 Tbsp. olive oil
  • 2 Cloves garlic, chopped
  • ¼ C. chopped onion
  • 2 Large tomatoes, chopped
  • ½ C. sour cream or plain yogurt
  • ½ C. Lowfat Milk
  • ¼ C. Parmesan cheese
  • 8 Oz. Fettuccini, cooked according to package
  • ⅛ Tsp. pepper
  • ⅛ Tsp. salt
Instructions
  1. Wash chard, cut into small pieces. Heat oil in large 2 Qt. saucepan over medium-heat, 1-2 minutes.
  2. Add chard, garlic and onion; cooking 1-2 minutes, stirring constantly. Add tomatoes, sour cream, milk, parmesan cheese, cooked fettuccini, pepper and salt. Stir well. Serve warm. Makes 4 servings.
